Slingshot hits will look damn fine on the grass, all you have to do is lay down a fine layer of dry dirt (if the dirt isn't dried up already) then shoot a rock from the slingshot so it kicks up the dust. It will look identical to a bullet hittng the ground, I guarentee it. Just use a small enough rock and shoot it hard enough that it won't be seen, and make sure the dirt is loose and dry enough that it will kick up easy.

What I'm doing for my wall hits:
You get a large foam board (actually, it can be made out of anything that you can easily put holes into, but make sure its thick).
Paint the board so it matches the scene, then drill holes in the board. Cover them with a thin layer gyprock/a flimsy filler of some sort, making sure it doesn't fill in your hole (Actually, paper would work best for compressed air, gyprock may work with firecrackers if its a really thin coat).
Place a small firecracker/nozzle for a air compressor in the gap. And presto, instant bullet hits with bonus bullet holes! You can stuff dirt and dust in around the firecracker/nozzle to create a better effect.
Good thing about this is that you can re-use the board .

Re: wall hits
You can put a fake wall on top of the real one with some drywall, it's real cheap and easy to do and clean up, hollow out the back and put a squib behind it and cover it with a small sheet of metal and ductape so the easy way out for the blast is where you want it, and cut the drywall with a razorblade to make it easy, you can see how to make a squib charge detonator in our behind the scenes.
